what is frangipane?

Frangipane is a sweet almond filling, usually made with butter, eggs, ground almonds, sugar and flour. In this recipe the flour is replaced with oat flour, making this recipe gluten free. If you are gluten sensitive, make sure your oats are gluten free!

how to prepare apples for the tart

Apples like to brown when they are cut. To keep the apple slices looking pretty for the top of the tart, they are going to have a citrus bath for a few minutes.

Place cold water, lemon or lime juice and granulated sugar in a medium bowl and stir it all together.

Then slice the apples thinly and place the slices into the citrus bath. Allow them to soak while you prepare the frangipane.

Frangipane is fairly forgiving but like most things it does have a perfect point. It should rise in the oven and form a golden brown crust, with a just set centre. The main cause of undercooked frangipane is baking at too high a heat. The crust will brown too quickly, leaving a soggy centre.
