Ingredients
- 2 Tablespoons cream cheese
- 2 Tablespoons salted butter, softened
- 2 Tablespoons Swerve brown sugar
- 1 Tablespoon fine almond flour
- 2 Tablespoons crushed pecans Note 1
- 1 teaspoon pure vanilla extract
Pecan Topping
- 1 Tablespoon crushed pecans (optional) For rolling the fat bombs.
Instructions
Line a baking sheet with parchment paper.
Cream together the cream cheese, butter, and Swerve brown sugar.
Stir in almond flour, crushed pecans and vanilla extract and mix well to combine all ingredients.
Use a small ice cream scoop or teaspoon and make 4-6 fat bombs.
Optional: Roll the balls in the 1 Tablespoon of crushed pecans then onto the prepared baking sheet.
Place the baking tray into the freezer for at least 30 minutes to set.
Ready to serve.

Fantastic treat for those doing low carb, diabetic or keto eating.
I used pure vanilla so only used half what the recipe recommended. I made the balls smaller, 12 out of one batch and sprinkled with sea salt. Yummm, fantastic treat! Thank youReply

Great recipe, I can't wait to try it as is. I did with what I had. And it still came out amazing. Like I said...I need to try it your way also. <3 Thank you for this recipe!I unfortunately went to my cupboard to of course discover I did NOT have all the ingredients (BOO). So instead of the Swerve brown sugar I used Lakanto Golden raw cane sugar (1 TBS - not 2 Tbs like recipe says). Instead of the Vanilla (is the recipe correct? 1 Tablespoon of Vanilla extract?) I used 1 tsp Lakanto Monkfruit sweetened Maple flavored syrup (figured this would help with me using less of Lakanto Golden sugar and added flavor) and also about 1/4 tsp of vanilla extract. Everything else is the same. So delicious. Wow. Now I will add that specific brown sugar to my shopping list. I thought I had some...bummed I did not. Thank you again. I want to make something for pops that he can have with his Diabetes. Daddy loves Pecan Pie. <3
